Fruit n Nut cake

Fruit n Nut cake
 I think u dont need any occassion to enjoy a cake .cake is one such dessert that can be enjoyed at any time  after meal, tea time snack ,morning breakfast ........any season of the year.kids really hate eating dryfruits,so the best way to make them eat is "in disguise".and what better way than a cake, novelty +health . To bring the zing in the cake just added lemon zest to it......and voila ....it completely changed the flavour of the cake from .....simple to citrucy. I love the aroma of lemon .My kids are really fond of baked goodies.and this ones for my cuties..........heading to the recipe .........


INGREDIENTS

  • 1 1/2 cup all purpose flour(apf)(maida)
  • 1 cup oil
  • 3/4 cup caster sugar
  • milk as required
  • 1 tsp baking powder(bp) 
  • 1 tsp vanilla 
  • 3 eggs 
  • 100gms fruit cocktail   (mixed nuts and dried fruits)

METHOD


  1. Preheat the oven to 180 c. 
  2. Grease the cake tin with butter or oil and dust it flour .sieve  apf,  bp . 
  3. Chop the nuts andrub the nuts with hands in the flour so that they dont get settled at the bottom of the cake.
  4. Beat the eggs till fluffy,add vanilla to it,now add oil,sugar and mix it till well mixed.
  5. Now add the dry ingredients to it and mix it by cut and fold method.
  6. Add a little milk to get the desired consistency of a batter
  7. Add lemon zest of a big lemon,fresh preffered but u can use dried also if not available
  8. Pour it in the cake tin and bake for 30 -40 mins or until the skewer comes out clean

           Enjoy ur cake with a hot cup of coffe or tea   .............HAPPY BAKING.




NOTES
  1. I have used mixed nuts which contain dried berries, pineapple,papaya ,dry fruits   etc if not available u can use individually ,tutti fruity,or any dry fruits available.
  2. I prefer oil cakes to butter cakes  to reduce the calories and enjoy it guilt free.but if u want u can still add only butter to it 
  3. If adding butter do use a hand blender or a processor.other wise u can just blend it with manual blender or spatula
  4. Added milk just to get the batter consistency,it makes the cake soft as well.
  5. Keep checking after 30 mins ,because it entirely depends on the type of oven ,capacity......
