Egg sandwich



Usually after the heavy brunches or late night  dinner parties in the weekend we think of a much easier and quick to assemble breakfast on a first working day.If Ur looking for such easy tiffin idea or a breakfast on the go......then u r search ends here.
This egg sandwich has all the nutrients needed to give a kick to Ur weekend hang over. An added health benefit to it is its creamy yoghurt sauce(made from hung curd ,tahina),unlike the regular mayonnaise,which adds calories to Ur belly besides taste.to make it much healthier u can substitute with brown bread(a much healthier option).
I have used only the boiled egg whites ,if Ur making it for kids u can add even the yolk(if they prefer)A perfect ......it would rather be better to say .....a nutritious way to start the day.
The protein's from the egg,carbs in the bread and not to forget the miracle ingredient in it "cucumber"with its antioxidant and anti inflammatory properties,and the show stopper"yoghurt"loaded with calcium vitamin B12 and B2provide the ample amount of energy for u to start the day , and keeps u full holding u from indulging in munching.If Ur working and really busy then u can have it in the go. so have a look  and try it .


INGREDIENTS

Yogurt sauce
  • 1 cup hung curd
  • 1 tsp tahina
  • salt to taste 
  • pepper to taste
To assemble
  • bread
  • boiled eggs
  • grated cucumber






METHOD

  1. Trim the edges of bread.Chop the boiled eggs,Grate the cucumber and keep aside.
  2. For the sauce mix all the ingredients to gather to a smooth ,creamy paste.
  3. Now spread a generous  spoon of yoghurt sauce on four bread slices.place the chopped eggs,and spread grated cucumber over 1 slice and place the other one over it.
  4. Press slightly so that they hold each other.
  5. Cut into triangles or rectangles and serve

NOTES

  1. Try to use hung curd only because regular curd will make the bread soggy.
  2. If u wish u can add more veggies like capsicum ,tomato.....etc
  3. Yoghurt sauce can be made prior and stored in the fridge.
