Spinach / palak is a power house of nutrients,but unfortunately its avoided by kids due to its colour and smell . I usually pair it with paneer , mutton or corn to make it lovable .Its a win -win combo spinach+ corn .
Corn is loaded with fibre and your gut will really be thank full for such food .This dish satisfies the kids never ending quest for "something good " ......at least I think so . "Don't you agree with it ".Serving kids with vegetarian food...... and making them 'eat' happily is another herculean task.
Looking upon their elongated faces at the very sight of veg dishes on the dining table makes me really feel guilty that I am forcefully making them eat the most disliked food .
But being a mother I have to ....include a balance diet for them....which is indeed becoming very stress full with each passing day . But In sha Allah soon they will realise its importance .....aha they are realising it one day S was saying "Mom do you know ? cucumber , tomatoes ,carrot contain
more amount of water which is necessary for our body so we should have them in our diet .We learnt it in our new lesson .I was more than happy to hear it from her and thanked Allah for the enlightenment of the kids .
Just serve it with a dollop of butter and your kids will never say no to spinach.
The recipe follows .................
INGREDIENTS
- 2 C spinach
- 1 C corn
- 1 tomato
- 1 onion
- 1 chili
- 1/2 tsp jeera
- 1/4 tsp turmeric
- 1/4 tsp chili powder
- 2 inch ginger
- 2 garlic pods
- salt to taste
- 2 tbsp oil
- 2 tbsp butter
- 2 tbsp coriander leaves
- 1/2 tsp garam masala
METHOD
- Heat oil in a pan .Add chopped onion ,garlic,chilly and ginger and cook until soft .
- Now add chopped tomatoes and cook till mushy .
- Add all the spices listed and stir .
- Roughly chop spinach and add to the mixture ,cook until spinach has become translucent .
- Allow the mixture to cool .
- Blitz the mixture to a puree .Steam corn in a steamer .
- Heat butter in a pan add the puree , corn adjust salt and cook on high for 3 mints .
- Simmer the flame and cook for 3-4 mints .
- Serve hot with chapati or naan or paratha of your choice
NOTES
- You can add other veggies also .
- You can skip butter and use oil for the last step .
- Tinned corn can also be used , just drain water and add to it.
- I have used fresh corn so steamed it before adding .
