Corn has always been my favourite . Back home in India as soon as the showers begin the markets are flooded with corn on the cob or bhutta what we generally refer to . The chilling breeze with shower of rain and warm bhutta is a combo which I miss the most here.
Though Alhamdulillah we get corn abundantly here but miss the rains.Hmm ...its the human nature that what ever we have we don't realise it importance - take it for granted and miss it after its gone so far from us .
Got some fresh corn that was tempting me to churn a salad to munch on .
I have kept it simple for my kids . but you can make it spicy as a chat version too .
INGREDIENTS
- 2 cups fresh corn
- 1 cucumber
- 1 tomato
- 1/2 carrot
- 2 tsp lemon
- 1/4 tsp pepper
- salt to taste
- coriander few leaves
- mint a few leaves
METHOD
- Chop cucumber, carrot ,tomato in to fine pieces .
- Steam corn on the cob for a good 15 mints.
- Cool it and remove the corn pearls with a serrated knife .
- In a large bowl mix all the spices and give a nice toss.
- Add mint , coriander , lemon juice and toss once again.
- Your corn salad is ready to munch on .....
NOTES
- Step 2 is if you are using corn on the cob .
- you can also use canned corn .
