My daughter S was having their fun day at school and she wanted me to bake a cake to share with her class mates .While I was deciding on what to bake ,soon I realised that I was running short of eggs and it was too early in the morning for the shops to open .Rather than that I was feeling lazy to step out of the house and ferry my self eggs .
Suddenly my eyes fell on the yogurt lying in the fridge and........ what else? I decided to bake an egg less cake. A plain vanilla cake would be boring for the kids ,and for a complete chocolate cake i was not confident of the egg less version . I had tried vanilla cake and loved the texture and taste of it ,but was sceptical with chocolate ..Finally decided that I will go with a marble cake.It came out so perfect that no one could figure it out that it was an egg less cake
Lets start baking ........
INGREDIENTS
- 3/4 cup all purpose flour(maida) (apf)
- 1/2cup yogurt
- 1/2 cup sugar
- 1/4 cup refined oil
- 1 tsp vanilla
- 1/2 tsp baking soda (b.s)
- 1/2 tsp baking powder (b.p)
- 2 tbsp coco powder (mixed in 1tbsp milk)
- 3 tbsp milk (if needed)
METHOD
- Grease the loaf or cake tin with butter , dust it with flour and set aside .
- Whisk together yogurt, b.s, b.p with spatula until the sugar dissolves and becomes creamy mixture.
- Set this mixture aside to rest for 10 mints .
- Now u can see the mixture has become frothy .
- Add oil and give a gentle mix .
- Sieve the flour 2 times from a height and add to the mixture in 3 batches.
- Mix it gently to form a smooth batter.
- Divide the batter into 2 parts in 2 bowls .
- Add vanilla to 1 bowl and coco powder to the other one ,and mix it gently .
- Preheat the oven at 200 c .
- Take the cake tin and add the cake batters alternately .
- First a layer of vanilla followed by chocolate and so on till the top layer of vanilla.
- Take a tooth pick and gently swirl it around the batter to give the marble effect .
- Bake the cake at 200 c for 10 mints and at 175 c for 20 mints,or until the tooth pick inserted comes out clean .
- Remove it from the oven and allow it to cool in the tin for 20 mints .
- Remove the cake from the tin and and cool it on a wire rack completely before cutting.
- Your marble cake is ready.
NOTES
- Step 2 and 3 are very important for the fluffy texture of the cake .
- I have used a loaf tin so I had slices of the cake ,you can use a cake tin also .
- After adding do not be vigorous at mixing as oil tends to emulsify on high speed and makes the cake hard.
- Mixing in batches avoids lumps.
- The temperature settings differ from oven to oven so keep an eye from 20 mints onwards.
