White chocolate cups with strawberry bavarian cream |How to make white chococlatecups and strawberry bavarian cream from scratch



Bavarian cream??Let me give you a insight into what it is.Bavarian cream is also known as Bavarios/Cremebavaroise.Bavarian cream is a dessert made from eggs,whipped cream,sugar,vanilla bean.It is usually served with a fruit sauce or fruit puree and can be used as a filling for cakes, donuts or pastries.


I have made the strawberry version of Bavarian cream with edible white chocolate cups.What a joy it would be if you can eat the dessert as well as the serving cup too?For a person with a Sweet tooth it would be a win-win situation.This is perfect option for parties or birthdays or large gatherings where you need a lot of time to gear up for the main course.It is a make ahead dessert which doesn't demand much of your attention once popped in the refrigerator. 



Note;

  • Bavarian cream is a full on dessert with eggs ,so there is no egg less version of it .If you want to avoid eggs, just add strawberry coulis to whipped cream and indulge.
  • If you are allergic to eggs or on a medical condition or avoid eggs due to religious beliefs,I truly respect it and advise that this recipe is not for you.
  • All the ingredients are at room temperature unless mentioned.
  • Cool the mixture to room temperature before mixing with whipped cream.
  • To make Bavarian cream we are cooking it first on a ban Marie and later on the flame because eggs cook really fast,so to avoid strawberry scrambled eggs (heeeee) we have done it this way. 






Step wise tutorial to make white chocolate cups with strawberry Bavarian cream 

Preparation time for cups :10 minutes
Setting time for cups:10 minutes
yeilds:8 cups
Preparation time for Bavarian cream:10 minutes
cooking time:20 minutes
cooling time :2 hours


Ingredients

  • 240 gms- white chocolate
  • 50 gms-sugar
  • 60 gms -butter
  • 2 -eggs
  • 1/2 cup -strawberry coulis(click for recipe)
  • 250 ml- whipping cream 

Procedure

To make chocolate cups 

1.Melt the white chocolate in a ban Marie -To a sauce pan add water and simmer the flame,put a wide mouthed bowl on top of the sauce pan so that the water doesn't touch it(refer pic) . or in a microwave until melted and glossy.

2.Take 1  tbsp of melted chocolate in a cup cake liner and spread it with the help of a brand new paint brush or a small pastry brush.



3.Place the liners coated with chocolate in a muffin tray and place in the freezer for 10 minutes.

4. Remove from the freezer and hold the liner against the light.

5. If you see light passing through it .coat it second time or else proceed further.But I advise a second coating for sturdy cups.



  6.After second coat place the liners in refrigerator to set .After 1/2 an hour slowly peel the liner .Your chocolate cups are ready,place in refrigerator until used further.

 To make Bavarian cream


1. To a ban Marie add sugar , butter ,strawberry coulis and stir until butter is melted and sugar is dissolved.




2.Whip the eggs and add to this mixture .And keep stirring to avoid lumps .keep stirring continuously for 10 minutes until eggs mix completely .

3. Now transfer it to a thick bottom sauce pan and cook until thickened.

4.Swipe at the back of the spoon with your finger if you can see a line forming then your mixture is ready .

5 Remove and allow it to cool to room temperature.



6. Whip the cream according to the instructions on the pack until stiff peaks.

7.Add the cooled strawberry mixture and slowly fold it with a spatula .


8. Pipe it with a piping bag or a zip lock bag into the chocolate cups and allow to chill in the refrigerator.

9.Your white chocolate cups with strawberry Bavarian cream are ready .

  3. I didnt know Bain marie is just hot water bath process.. :-P Bavarian cream with strawberry is a yummylicious and the pictures are stunning! lovely nusrath!
