Roasted eggplant and yogurt dip /How to make roasted eggplant dip from scratch



Alhamdulillah we are in the second ashra (10 days) of Ramadan.In Sha Allah 20 more days left of his pious month .May Allah grant us hidayah to reap most out of this blessed month and beseech his blessings- Ameen. Usually during iftar time(breaking fast) in Ramadan a lot of fried foods are accompanied with fruits and juices .These fried foods are accompanied with dips and chutney's.This Ramadan I am trying to stay away from fried stuff as much as possible .Hope this continues.






The sunnah of the Prophet(SAW) is to keep your iftar((breaking fast) and suhoor(predawn meal) as a light as possible .The intention of Ramadan is to cut down on your food.This Ramadan lets go healthy with this roasted eggplant and yogurt dip  served with salad fingers. It's filling ,nutritious ,light on your stomach and less time consuming .This is a no cook recipe ,except the roasting part so no long standing hours in the kitchen. Usually kids frown at eggplant,so this is the best way to serve them eggplant and watch to be mopped up .

Roasted eggplant and yogurt dip 

Preparation time :15 minutes
serves :4

Ingredients

  • 1-eggplant 
  • 1 cup -Greek yogurt
  • 1-clove garlic
  • 1 tbsp -olive oil
  • a pinch of black pepper
  • a pinch of paprika
  • 1/2 tsp- lemon juice
  • salt to taste
  • oil for rubbing the eggplant

procedure

  • Rub the eggplant with oil and roast it on a stove top rotating it until the skin gets charred .you can use oven too for roasting but stove top method imparts the smoked flavour to the dip .
  • Once cooled carefully de-skin the eggplant .
  • To a bowl add all the ingredients except yogurt and with a hand blender blend it to a fine puree.
  • Now add Greek yogurt and mix it well.Adjust the seasoning and transfer it to a bowl,drizzle it with olive oil and paprika.
  • Serve it with your choice of starters or fingers.  


Notes

  • Choose the eggplant with has no seeds or tender seeds.
  • You can use regular mixer too for making puree.
  • Once you peel the eggplant add salt and lemon juice to it with out delaying as eggplant tends to get bitter.
