Broccoli usually doesn't find it's due place on the platter.Broccoli is the healthier and non complicated vegetable,as it doesn't require any laborious task of chopping or plucking like other leafy greens.Just cut the florets steam or blanch and you are ready to go with a bit of seasoning.When you have a bunch of people at home who frown at healthy food ,then broccoli cheese kebabs comes to rescue.Broccoli is one of the vegetables that comes at the end of the kids list of likes .May be because of the colour.Kids usually develop the hate relation ship because of the monster colour GREEN.Monster isn't green but the kids have made it green,the reasoning by my little one is-All dark coloured vegetables look like MONSTER.





Me:You don't eat any of the healthy vegetables?
Lil Z;No, mom I do eat .
Me.:Come on name a few which you eat?
Lil Z:I eat all the light coloured vegetables.Carrot,cucumber,cabbage(salad)potato,drumstick.....
Me:Why  only light coloured vegetables?
Lil Z:All dark coloured vegetables look like monster.
Me;ughhh?





How to make any one fall in love with broccoli ? CHEESE....is the solution .Mix the vegetable with cheese and be ready for a wiped out plate on the table.Broccoli cheese kebabs are  a breeze to make and also a wise decision to utilise some left over broccoli from previous dinner.If you are pressed for time then canned chickpeas are handy,though i havent used it .
Here is the recipe for a pleaser ......


Recipe for broccoli cheese kebabs

Prep time:20 minutes
cooking time;15 minutes
Servings:8



Ingredients

  • 120 grams-broccoli(steamed)
  • 1 cup- chickpeas(chana)
  • 1/2 teaspoon -black salt/sendha namak
  • 1/2 teaspoon -chilly powder
  • 1/2 teaspoon -chaat masala
  • 2 tablespoon-cream cheese
  • Chickpea flour/besan for coating
  • salt taste
  • oil for shallow frying

Procedure

1.To a food processor add all the ingredients up to chat masala in the list . 

2.Remove the mixture in bowl and add cream cheese.

3. Mix it thoroughly and adjust the seasoning .

4. Make roundels and press it with your palm to the shape of a kebab.

5.Coat the kebabs with chickpea flour and dust the extra flour.

6.Heat oil in pan and shallow fry the kebabs on medium heat until golden brown on both sides.

7.Serve it hot with your choice of chutney or ketchup.

  1. The kebabs look very interesting! Do you actually pulse the mixture to almost paste consistency or leave it a bit coarse?
