Chilly garlic chicken noodles|Chicken chow mien noodles




Are you a noodle fan ?Well me and my kids love noodles and pasta in any form .Especially the spicy chicken chow mien that we find along the streets in India.The spiciness is a bit hard for us to digest but any thing for noodles.Chow mien available in India is not the authentic Chinese version but an indo Chinese version .What is indo Chinese? well, the Chinese migrants settled in Calcutta (kolkata) began to serve food that suited the Indian pallete like sour,spicy etc.Hence this fusion was named indo -Chinese and it became so popular that it even became the pride of some exclusive indo Chinese restaurants.We often go gaga over the chow mien served on the streets ,but it is pretty easy to make at the comfort of your home .And this is definitely high on the health meter.While making at home you can actually avoid MSG(mono sodium glutamate) which is commonly used in restaurant food.The trick for a perfectly boiled noodles is to leave it a bit under cooked and drain it .It gets cooked while we stir fry it with spices.As a vegetarian option you can just avoid the chicken part and proceed with the same procedure but do adjust the seasoning to your preference.Do not use Maggi or any instant noodles for his recipe.I had purple cabbage so used it ,white cabbage too can be used.








Recipe for Chilly garlic chicken noodles

Preparation time:10 minutes
cooking time:20 minutes
servings:4


Ingredients


  • 400 grams- noodles
  • 1/4 cup- carrots(julienes)
  • 1/4 cup-capsicum(julienes)
  • 1/4 cup-carrots(julienes)
  • 4 -garlic cloves
  • 1 tbsp-chilly flakes
  • 4 tbsp-oil
  • 2 tbsp-soy sauce
  • 1 tsp-tomato ketchup
  • 1 tbsp-hot sauce
  • 1/4 tsp-black pepper powder
  • salt to taste
Marination
  • 150 gms-boneless chicken
  • 1/2 tsp -red chilly powder
  • 1/2 tsp -ginger garlic paste
  • 1/8 tsp -black pepper powder
  • 1/8 tsp -coriander powder
  • 1 tbsp-corn flour
  • salt to taste  


Procedure


1.Marinate the chicken with all the above listed ingredients and set aside for 10 minutes.

2.To a large pot add noodles to boiling water with salt and cook as per the instructions on the packet.

3.To a pan add oil and deep fry the chicken pieces until crisp and drain on a paper towel.

4.Once the noodles are AL Dante,there should be a bite ,a bit uncooked then drain the noodles in strainer and run under cold water .

5.Drain the noodles thoroughly and spread on a plate until needed.

6. To a big wok or a deep pan add oil followed by chopped garlic and chilly flakes.

7.Saute for 1 minute and add the veggies in order of carrot ,capsicum,cabbage and stir fry on medium heat for 2 minutes .

8. Set the flame to high and add the noodles ,fried chicken and remaining sauces and spices and mix well .

 9.Now saute the noodles on high for 1 minute until the noodles are dry and the sauces are well coated to the noodles.

10. Your chilly garlic chicken noodles are ready .

  1. I love indo-chinese food! We always called it Chinese food until I had food from Mainland China, a close to authentic restaurant. Ewww.. I am happy with Indo-chinese!Lol! Looks superb Nusrath!
