Aloo paratha

Being a stay at mom is probably the worlds toughest job,I hope most of u will agree with me .And the much more challenging aspect of this job is preparing a wholesome meal to suit  the palate of every family member
.No sooner u finish ur lunch, decide the menu for dinner, after dinner ....what next for breakfast....for the lunch box....aaaaah.This recipe comes handy when u are really short of time .Can be made in a jiff, and the best part is u can prepare it for dinner and the surpless can be packed as lunch box .
Not all potato dishes are welcome on my dining table(do you think its abnormal?) I too feel the same ,I have often heard my friends saying that u can make their kids eat even the most disliked dish provided it has potatoes.
But in my case its entirely different.lil Z(son) has a soft side for potatoes, but S(daughter),she hates it to the core.First time I tried my hands on this to convince her that potatoes are not that.... bad.And Alhamdulillah my try was successful and this paratha has been added to their list of favourites.          The recipe is as follows........
ALOO PARATHA

INGREDIENTS

  • 4 potatoes(big ones)
  • 1 cup whole wheat atta
  • 1tsp chaat masala
  • 1 tsp chopped green chilli
  • 1 tsp finely chopped ginger
  • 3 tbsp chopped coriander leaves
  • water as needded
  • salt to taste
  • oil as required or ghee+1tbspoil
  • ALOO PARATHA

METHOD

  1. Knead a smooth dough with atta ,1tbsp oil and water as needed .Make balls of dough and keep it aside to rest.
  2. Boil ,peel n mash the potatoes.let it cool completely to room temperature.
  3. Now add the remaining ingredients and mix well with hands.
  4. Make tennis ball size potato rounds for stuffing .
  5. Make a thick small  roti by flattening the dough, add the stuffing and seal it .
  6. Flour the surface and flatten it using a roller pin .Meanwhile heat a tava or a pan.
  7. Cook it on the pan drizzling some oil until both sides  are golden brown.
  8. Serve it with raita or pickle,or just plain yoghurt.

NOTES

  1. Donot over boil the potatoes or else they become soggy.
  2. knead the flour to soft atta ...if its more softer it cant hold the stuffing.
  3. The paratha should be rolled thin..other wise the stuffing comes out.
  4. U can add more chillies if u like  more spicy.
  5. Serve warm.....tastes best.
