Badam kheer

Hi everyone ,today I  am gonna sharewith u one of our family favourites badam kheer.Kheer is an Indian name for  rice pudding.The addition of almond meal gives nutty flavour to this classical kheer.You can call it a complete food(dessert) in it itself.The wholesome goodness of milk +carbohydrates of rice=power pack of energy .A healthy substistute for growing kids.As a mother I feel satisfied when I feed my children with such delicious and nutritious food.




INGREDIENTS

  • 1litre milk
  • 1/2 cup basmati rice
  • 15-20 almonds
  • 1/2cup sugar
  • 1/2 teaspoon elaichi(cardomom) powder
  • 2 tbsp condensed milk
  • slivered almonds for garnish
METHOD
  1. Wash rice and drain the water completely.spread it on a kitchen towel and dry it in cool shade for half to one hour.
  2. Ground the rice into coarse powder.remove it.
  3. In the same grinder grind almonds into almond meal.
  4. Boil milk add rice powder and keep stirring.
  5. Be careful at stirring because  at this stage lumps tend to form.
  6. When the rice is half  done add condensed milk,sugar,elaichi powder and  almond meal .
  7. Keep stirring until the rice is done and  the consistency has thickened
  8. Badam kheer
  9. Garnish with almonds.
  10. Serve chilled.
NOTES
  1. Make sure that the rice is ground coarsely.
  2. Do not thicken it too much .while cooling it gradually thickens.
