Whole wheat eggless banana muffins | How to make whole wheat eggless banana muffins from scratch |Breakfast muffins |Healthy muffins




While the kids are lazying around in their  2 week winter break i am posted on a 16 hour duty -Yes!! when the kids are at home you have to be as active as you could be ,just wave your magic wand and produce the food ."Magic wand "!!! yes the kids believe their mother as a fairy who has a magic  wand ,waves it and produces the most tasty food in  the world .



The rules are changed for the holidays ;

  •  No regular routine breakfast ,different from the ones they carry  in their lunch box
  • Every 1/2 to 2 hrs there should be a snack served ,that too not repeated .
  • Evening tiffin (snacks) is a must with tea or coffee.
  • Lunch and dinner should not be the same ,I mean curry for the lunch should not be served for dinner.
  • "Khaane ke baad kuch meetha hojaye"(shall we have a sweet after food) is the motto for holidays. 


Do you have any such rules at your house? Oh God!!! I wish I could have four hands may be that too wouldn't be enough.More over you become an umpire to preside over their quarrel for silly things.

But the other side of vacations is relaxing ,lazy mornings no hurry at all to be in time to catch the bus .Wrap up your self in the cardigans and enjoy a hot cup of coffee in breezy chilled morning,Late brunch ,late lunch or even skip it just enjoy evening snacks.



Added to the woes this weekend Almighty had showered his blessings in  the form of rain,the most wettest day of my life in Qatar . It rained for almost 20 long hours continuously!!!.We eagerly await for the showers every year ,which never show up.But this time it was raining cats and dogs.

Qatar has been blessed to have more than normal rainfall that left behind the streets flooded with water. Alhamdulillah there was no power cut and water logging at our place. The municipality was very active as the suction trucks were clearing the water logged roads bringing back the life to normal Thankfully it was a weekend and the man of the house too was safe .For that one day I felt the sigh of relief that the kids were having vacations.




The plans of the kids for a weekend outing were shattered ,"Mom shall we bake some thing for the evening to go along with tea ." I just need an excuse to bake ,so decided to go with these Whole wheat banana muffins .The over ripe bananas dumped in the freezer for later use, too were pleading to be used up. 

Whole wheat,eggless,butter less ,spiced with cinnamon- I don't think there is any other reason  to refrain yourself from baking these muffins.Just follow the recipe to T and you will end up with moist ,fluffy, healthy muffins.Did I tell you there is Flax seed powder too to make it much healthier?
These muffins are perfect for on the go breakfast and ideal for snack box too.

By far banana is my favourite fruit till date for baking

Recipe for whole wheat banana muffins

Preparation time :20 minutes
Baking time : 20 -25 minutes
Yields :6 PCs

Ingredients

  • 3/4 cup/ 90gms - whole wheat flour /atta
  • 1/4 cup /65 ml-vegetable oil 
  • 1/4 cup - granulated sugar
  • 3/4 tsp - baking powder 
  • 1/4 tsp - baking soda
  • 1/8 tsp - cinnamon powder 
  • 1 tsp - flax seed powder
  • 1 tsp - vanilla essence
  • 2 - medium size ripe banana
  • a pinch of salt
  • Chopped walnuts

Method

1.Sieve together flour,baking powder,baking soda,cinnamon .To a bowl add bananas and mash with a spoon or a masher,If you are using frozen bananas like me bring it to room temperature by simply leaving on the kitchen counter.


2.Add sugar and mix until the sugar dissolves completely.Later add oil and mix it .


3.Add flax seed powder,vanilla essence , and give a nice stir .Preheat the oven at 160 c .


4.Add the sieved flour mixture,to the wet mixture and gently fold with the help of a spatula,do not          over mix.

5.Line the muffin tray with muffin liners.With the help of a scoop spoon out the batter into the              liners.fill the liners up to 3/4  only.


6.Tap the liners on the counter to remove any trapped air and top with chopped walnuts.

7.Bake at 160 c for 20 minutes or until a skewer comes out clean.

8. Allow it to cool on a wire rack to room temperature.



9. Whole wheat banana muffins are ready .

Notes

  • Check the oven temperature accordingly,Keep an eye from 20 minutes onwards.
  • Over mixing the batter will cause the oil to emulsify and in turn results in rock hard muffins.
  • I have used frozen banana hence the colour is dark .
