The region of rayalseema in Andhra pradesh is known for its spicy food.As you move towards the cities of guntur, nellore the food becomes spicier beyond imagination.Seriously it isn't for faint hearted.One such speciality is yerra karam dosa or in lay-mans terms onion masala dosa .It is also referred to as ulli karam dosa .A simple raw onion and spices paste when smeared with ghee on dosa elevates the taste of a humble dosa to several notches higher.

How to make paper roast dosa from scratch | Rice crepes from scratch | South indian dosa recipe |home made dosa from scratch|How to make dosa batter from scratch in a blender or mxer
By looking at the picture and title of the post you must have understood that today's post is dosa .Paper roast dosa or Sada dosa as it is generally referred. Idli's and dosa's are the most common south Indian breakfasts or you can say an integral part of south Indian cuisine .Paper roast or Sada dosa or ghee roast, if drizzled with generous amount of ghee (clarified butter) is a paper thin rice crepe usually served with sambar and chutney .
I have grown up eating home made dosa's and idli's ,and thank god that my kids too are lucky enough to be fuelled with home made food .Though making dosa batter at home from scratch calls for some pre- planning but it is worth the time and energy invested .Yup " THE FRUITS OF LABOUR ARE ALWAYS SWEETER ",in this context crispier, on the outer layer and soft at the inner layer .Usually a wet grinder is used to grind the batter ,but I have always seen my mother and grand mother grinding it in the mixer . So me too walk in their foot steps and make the dosa batter in table top mixer .

Ragi dosa
Ragi is commonly known as finger millet. Ragi flour is made into flat breads, including thin, leavened dosa and thicker, unleavened roti. Ragi grain is malted and the grains are ground. This ground flour is consumed mixed with milk, boiled water or yogurt.
In India, Ragi recipes are hundreds in number and even common food stuffs such as dosa, idly and laddu are made out of ragi.
In southern parts of India, pediatricians recommend finger-millet-based food for infants of six months and above because of its high nutritional content, especially iron andcalcium. Home-made ragi malt is a popular infant food.Well ,lets talk about ragi malt in another post ,for today its ragi dosa .
This is generally a regular dosa with added flavour and nutrition of ragi .
