I think gajar ka halwa / carrot halwa needs no introduction for us (Indians ). But still for my friends(other than Indians) who don't know about this ,This is a dessert made with grated carrots and khoya(milk reduction) and tempered with generous amount of ghee !!!(yes you read it right )and dry fruits .
It is the most sought after dessert after kheer .You can find this dessert adorning the dining tables especially during winters when the red carrot which is an Indian variety of carrot is found in abundance .It(red carrot) is believed to be more nutritious and provides warmth to the body than the regular carrot .
When I was on my grocery shopping found these red carrots and grasped it with the intention of making halwa and Alhamdulillah it came into effect (thanks to the pestering of my kids )other wise these days I have been so lethargic to whip up even simple things !!!!may be its the weather that's making me feel drowsy ....): .This time I have tried it with instant mawa (khoya).....do check it out .
Lets start cooking ...................
- Badam kheer
- Coconut barfi
- Kaddu ki kheer(bottle guard pudding)
- Fruit, chocolate,yoghurt parfait
- Orange pudding
- Custard trifle
- Rice pudding pie
INGREDIENTS
- 1 kg red carrots
- 3 tbsp (heaped)ghee/clarified butter
- 1 1/4 cup / 150 gms sugar
- 1 cup milk
- 30 gms Almonds
- 30 gms cashews
- 1/2 tsp cardamom powder
For instant Mawa
- 140 gms / 1 cup Milk powder
- 200 ml fresh cream
PROCEDURE
FOR MAWA
- Mix both milk powder , cream and microwave for 2 1/2 min .
- Stir for every 1 mint.
- Allow it to cool completely and use .
FOR HALWA
- Add ghee to a pan and fry cashews until golden and set aside .
- Blanch almonds , peel and chop them .
- To the same ghee add grated carrots and saute for a good 1 5 to 20 mints on low flame .
- Now add milk and cook until the milk dries up .
- Add mawa and cook for 1 mint .
- Garnish with dry fruits and serve warm .
NOTES
- You an use regular carrots too .
- Adjust sweetness as per your taste .
- If you prefer you can add condensed milk instead of khoya .
- Please do not add water .
