Are you a noodle fan ?Well me and my kids love noodles and pasta in any form .Especially the spicy chicken chow mien that we find along the streets in India.The spiciness is a bit hard for us to digest but any thing for noodles.Chow mien available in India is not the authentic Chinese version but an indo Chinese version .What is indo Chinese? well, the Chinese migrants settled in Calcutta (kolkata) began to serve food that suited the Indian pallete like sour,spicy etc.Hence this fusion was named indo -Chinese and it became so popular that it even became the pride of some exclusive indo Chinese restaurants.We often go gaga over the chow mien served on the streets ,but it is pretty easy to make at the comfort of your home .And this is definitely high on the health meter.While making at home you can actually avoid MSG(mono sodium glutamate) which is commonly used in restaurant food.The trick for a perfectly boiled noodles is to leave it a bit under cooked and drain it .It gets cooked while we stir fry it with spices.As a vegetarian option you can just avoid the chicken part and proceed with the same procedure but do adjust the seasoning to your preference.Do not use Maggi or any instant noodles for his recipe.I had purple cabbage so used it ,white cabbage too can be used.
