Broccoli soup | healthy soup| Diet soup|Restaurant style broccoli soup

You must be wondering where have I been vanished ?Hmmm, after a brief illness I am back .So today a hearty and healthy  broccoli soup which I had made when I had literally lost my appetite ,all thanks to the antibiotics  grrrr!!!.I had no choice but to swallow them to over come flu and fever !!!.A healthy broccoli soup that satiated my hunger as well as provided nutrition to my almost feeble body.

Broccoli  is a power house of nutrients ,as you all know my kids are soup lovers .Broccoli is generally not preferred by them as a vegetable ,so why not churn it into soup and serve it to them ...good idea right!!!.No...this soup can be savoured even if you are not ill,it tastes better to a healthy person .So next time  when  you are in no mood for an elaborate dinner just whip up this soup and serve it with some garlic bread or bread croutons ,you are done with healthy dinner   .

Cream of mushroom

I love soups ,and can have at any time of the day .Especially i prefer soups for Sundays ,usually after a bursting weekend  , gulping down  loads of non veg and desserts.(the part of the world where i stay week starts from Sunday !).Soups are the best as a pre lunch treat for the kids.

My kids are more than  happy at the very sight of soups ,making my woes of cooking a little bit lighter:).We first had this soup at a buffet dinner and S had become a fan of this .When I was on my grocery shopping she picked a tin of mushrooms and was saying "Mom you should try the mushroom soup this time ".
I have used cream for this particular soup to bring out the restaurant taste .If you prefer a lighter version you can substitute with milk but the taste too differs :).You can also try my cauliflower soup
 as a healthier option .

Creme Du Barry

I am a mom to the soup crazy kiddos !!!.My kids cant have just enough of the soups .they slurp it down with out any regular  pestering  what ?how ?when ?ooh its spicy ?.....and the list continues ....
I personally too like soups very much ,can have it at any time of the day ...even for mid night cravings !!!.Hubby is so..so with the soups ,me and my kids thoroughly enjoy and gulp it down with out any left overs....);.

Though I try and cook each and every seasonal vegetable ,cauliflower is something that hasn't made its  way to the hearts of my folks ,except the Gobi Manchurian !!!.As I had a cauliflower sitting in the fridge thought of serving it in the form of soup or you can say serve it in disguise ...:)
Creme Du Barry  is the french name for cauliflower soup

First of all going at the looks  S  mistook it to mushroom soup ,which has now become her favourite and after tasting it she reached to the conclusion "mom ,this is undoubtedly ,mushroom soup only !!!!__thanks to the creaminess of milk and flavour of oregano .I let her enjoy the soup in the misconception of "mushroom soup" .
What better way to enjoy the chill in the air with a warm bowl of soup .If you are having a watch on your diet then soup is perfect for you ,as I have replaced butter with olive oil and cream with milk.....A good substitute.... isn't it ? Seriously I never missed butter in it :)

Now off to the recipe ........
