Mango rose cake

With mangoes in season all I could think was this delicious beautiful mango rose cake.We are a family of mango lovers and relish mango on its own .But a cake never hurts-right? Mango has its own sweetness and colour and is perfect for cakes.A moist vanilla cake layered with whipped  cream and adorned with mango in the form of a flower.Why vanilla not a chocolate? ( my kids too asked the same ).I don't want to over power the taste of mango with chocolate + mango and vanilla are a combo made in heaven.I have just added mango puree between the whipped cream layers just to increase the mango flavour.

Dinner rolls| Pav




Hello every one !! Hope you all have been well.Catching the train with today's recipe.Dinner rolls or pav/pau as we call in India is a staple of every house hold.These mini,feathery bundles of joy have been my all time favourite.I still blurly remember the chaos at our local bakery for fresh out of the oven breads and dinner rolls.This is the second bread post on the blog after leopard bread which is the most popular recipe till date.Bread making isn't a cake walk- no I am not terrorising you.Baking a cake and frosting is much easier compared to bread making,well that is my opinion and I am sure with practise In Sha Allah I am gonna conquer my fear.

Strawberry cobbler



This month for the Muslim bloggers challenge we were assigned "cooking from the scrap book".I had missed the last months challenge due to illness.For the newbies who want to know about what MFB is please have a look at the previous challenges here and here.During the pre-Internet days when I landed in this oryxland(Qatar) television was the only source of knowledge available regarding cooking.Unlike now, where we have 24 hours food and travel channels there were only 2 Hindi cooking shows aired on Sundays and I would get glued to the television for that half an hour.

Upside down apple cake




With the nip in air all you crave is a warm mildly sweet cake or a deep fried goodness -Agree?I better go with the baked one, first reason being the man of the house not really a fan of deep fried goodies and the second reason is the aroma wafting round the house that literally soothes your senses.Though winter has arrived much later it has started with a bang .Apart from the freezing cold the best part of winters is the winter produce and warm bakes.A big slice of this upside down apple cake with some freshly brewed coffee and the family gathered at the tea table ,is sheer happiness.What else could any one ask for? With apples in season this would be a perfect treat.Though apples are available here all the year round the winter apples have that perfect crunch and sweetness.This cake is perfect to gobble when warm with a dollop of whipped cream or ice cream.

Double chocolate chip cookies



Thick fudgy double chocolate chip cookies 🍪  -what dreams are made of.Soft chewy ,fudgy,chocolaty cookies with a glass of milk,I can even skip my meals for the love of it ...shhh!! .Is there any one who doesn't like chocolate ? yup ! I know one ,and it is none other than my mom😉.She hates chocolate to the core.Mom doesn't like chocolate in  any form pastries ,ice cream ,chocolate(bar).The one and only chocolate she loves in the world is  Bounty.Why???As it has coconut in it ...Hehehe see south Indian genes of course .Any thing for the love of coconut even a chocolate.If not bounty then it has to be Rafaello chocolate. The other extreme is my kids,who never approve of any thing unless it has chocolate in it 😂.Starting from chocos to the milk they have every thing chocolate flavour🍫.

Its been a long time since the last cake post on the blog .So today its time for a cake.Today on the  blog is rustic fig and almond cake. Figs provide the fruity element to this awesome,moist,buttery  nutty cake. Figs are one of my favourite foods and I can have them in any form at any time.More over its a fruit of great health benefits and sunnah of our prophet. Rose water is a typical middle eastern  speciality that lifts this cake to a higher notch .I have just blitzed the almonds with skin in a grinder and used for this recipe but you can go with ready made almond flour too.

Mangoes haven't  still appeared in  this part of the world.The ones that are available are not of good quality.After drooling over the mango recipes all over social media I couldn't control my self  from baking a mango cake .Off late i have realised that I haven't baked any thing with mango yet . The main reason is we are a Mango loving family and my kids really warn me to stay away from mangoes .They just want to peel ,dice and gobble .This one is a simple recipe with almost all ingredients easily available .Readers of my blog always ask me for a simple recipe which a novice can bake .With some mango puree left in the fridge I have tried this cake hope you all  will like this . I have used gelatin you can substitute it with agar -agar too for a vegetarian version. Joconde imprime is a french technique using almond flour .But I have dared to do it with regular sponge recipe.Filled with mango mousse and mango jelly this cake tastes mango in every bite .Bake the pattern first and later the sponge .

Chocofill cookies are soft chewy cookies with bursting chocolate in the centre. In short  it would be a chocolate lovers paradise.Soft ,chewy,buttery cookies with melt in the mouth, smooth ganache are just good enough to hypnotise any one .You just need a glass of chilled milk and a box full of cookies to pamper your self .These  chocofill cookies were so yummy that I couldn't control my self gorging on it.

"Sweet potato cake" as the title suggests is dense ,moist cake  frosted with nutella .I know you might be frowning by now .'sweet potato and a cake' ,my kids too did the same .younger one was constantly pleading "Mom why do you want to use a sweet potato in a cake ?How will it taste ?please mom, bake me a simple cake with out sweet potato .He was standing beside me carefully observing every detailing of the recipe eagerly awaiting his chance to lick clean the bowl and the spatula .And after done he passes the verdict "Hmm!! the batter is delicious so the cake too will be delicious ".And while the cake was baking, the aroma that was wafting around the house pulled the kids to the kitchen .

Mom ,What's there for breakfast ? This is the most irking question .Deciding the every day menu with 3 different meals is tedious job.With the school running in full swing and summer at its best I prefer a hearty and healthy lunch box which lifts their mood and makes my job (cooking) easier.Schools here in Qatar start as early as 6.30 am,Yes you read it right 6.30 am and the kids have to be ready by 5.30 to catch their school bus .

THE FOOD FACTORY   turns 1 (year old) this week , to be precise on 18 September. 

A baby ( my blog) that was delivered out of passion , nurtured with proper nutrition(recipes) .. taking tiny steps ...some times stumbling upon,raising again , celebrates its first birthday (blogoversary).

This day(18 Sept) last year I had pressed the "publish" button for Chinese bhel with shivering hands and a lot of anxiety to dive into this vast ocean named 'blogosphere".My blog went live in  this world of Internet .

Baking partners challenge for the month of June was suggested  by Tamy of savoury kitchen table. Two recipes were  suggested ,but I went with the second one which is the salted caramel cheese cake cups.This was the first time that I had tried my hands on salted caramel and it was totally yummy .Thank you Swathi and Tamy for a  wonderful recipe .It was total fun making it . The actual recipe suggested baking in individual ramekins but I had baked in a baking dish ,cut it after cooling and served it .You can do it either ways .
