Upside down apple cake




With the nip in air all you crave is a warm mildly sweet cake or a deep fried goodness -Agree?I better go with the baked one, first reason being the man of the house not really a fan of deep fried goodies and the second reason is the aroma wafting round the house that literally soothes your senses.Though winter has arrived much later it has started with a bang .Apart from the freezing cold the best part of winters is the winter produce and warm bakes.A big slice of this upside down apple cake with some freshly brewed coffee and the family gathered at the tea table ,is sheer happiness.What else could any one ask for? With apples in season this would be a perfect treat.Though apples are available here all the year round the winter apples have that perfect crunch and sweetness.This cake is perfect to gobble when warm with a dollop of whipped cream or ice cream.







Qatar celebrated its national day yesterday(18 December).But unlike every year there was no public celebration like the parade in the morning or fire works at night.This year Qatar cancelled all  the national day celebrations in solidarity with Syria.That's one more reason  for me to love Qatar.Philanthropy not always  means materialistic aid but some times it is compassion. Its heart wrenching to see the videos of Syria all over the social media .All we could do is pray for the end of the atrocities on the innocent people.May Allah (swt) ease the difficulties of Syria-Ameen

Notes:
  • I have used a 8"  round cake pan.
  • All the ingredients are at room temperature.
  • Royal gala apples were used for this cake
  • I have used brown sugar to caramelise the apples but white sugar too can be used. 





Recipe for upside down apple cake 

Preparation time -10 minutes
Baking time - 40 minutes
Serves- 8-10


Ingredients


For caramelised apples
  • 2 apples
  • 1/2 cup- butter
  • 1/2 cup-brown sugar
For the cake 
  • 1 1/2 cup -all purpose flour/ maida
  • 3/4 cup -sugar
  • 1/2 cup- butter(softened)
  • 2 -eggs
  • 1/2 cup- milk
  • 1 teaspoon -vanilla extract
  • 1 teaspoon-baking powder
  • 1 teaspoon-cinnamon powder
  • 1/4 teaspoon -salt


Instructions


1.Sieve together all purpose flour/ maida,baking powder,cinnamon powder,salt.

2. Cream butter and sugar until creamy.

3.Add milk eggs,vanilla and whisk until the sugar is completely dissolved.

4.Slowly mix in the sieved mixture in batches to avoid lumps.

5.Grease and dust a 8" cake pan .Core the apples and cut it into 16 pieces.

6.Add butter to a pan and once melted add the brown sugar and whisk until it bubbles .

7.Transfer this mixture to the cake pan and spread it .

8.Arrange the apples the way you like in the cake pan.

9.Pour the cake batter in the cake pan  and level it with a spatula.

10.Bake for 30 -40 minutes or until the tooth pick comes out clean.

11.Allow it to rest in the pan for 10 minutes.

12. Flip the cake on to a cake stand or a plate before serving.

  3. That is an amazing looking cake! I know it's winter but I am away from baking thanks to all the weight I am gaining... :( I am totally in love with those pics...
