Uggani /spring biryani

Uggani /spring biryani is a simple rustic south Indian sibling of poha.Unlike poha which is made from flattened rice uggani is made from murmura/puffed rice .Its often referred to as peasant meal as it is doesn't require any fancy ingredients and can be made with just few ingredients in hand .Uggani often comes handy when your pantry runs out of the supplies or even on that lazy weekend morning when you literally don't want your self strained with a elaborate breakfast.The better half of this Uggani is mirchi bajji .Its usually served with mirchi bajji along the highways in Andhra,When you are sceptical of trying food from petty stalls due to the source and quality of ingredients used in cooking,you can opt for this healthy uggani . Uggani never disappoints you as a accompaniment with evening chai (tea).

Recipe for uggani

Preparation time:10 minutes
cooking time :10 minutes


  • 10 cups-murmura/puffed rice
  • 1-onion
  • 3 tablespoon-oil
  • 3-green chillies
  • 1/8 teaspoon-  mustard seeds
  • 1/8 teaspoon -turmeric/haldi
  • 2 sprigs-curry leaves
  • 2 table spoon-coriander leaves(chopped)
  • 1/4 cup-roasted gram powder/putanala powder
  • salt to taste 
  • lemon wedges and onion rings for garnish


1.Add puffed rice to big bowl of water in 3 batches and squeeze it gently and with both hands and place in a plate.

2.To a wok or kadhai add oil ,once the oil gets heated add mustard seeds to it followed by curry leaves and  chopped green chillies.

3.Add chopped onions to it and cook until the onions are soft .

4.Turn off the flame and add turmeric, salt give a quick stir and add the soaked puffed rice .

5. Stir it well until it gets completely mined well .

6.Add chopped coriander and place it on low flame for just 1 minute.

7.Serve it hot with your choice of bhajia, lemon ,and onions. 


  1. is this called uggani biryani in Andhra? The ingredients all look so much like puffed rice mixture that we get in paper cone? I am not sure, I may be wrong. But hearing this name first time! :-) And I still haven't seen puffed rice here. You get there easily?

    1. Yup!! just uggani or spring biryani.Almost same ingredients but that's a dry one .We get puff rice easily here.
