With the world becoming more health conscious new avenues of healthy eating are opening up.Its up to you which way would you let yourself to go.Finally trying to bring in some fitness and healthy eating discipline into my life.Hope I don't loose my mojo (which is very often) and get back to the dumping.Today's recipe is a raw tart which is,healthy,hassle free ,nutritious and comes under 20 minutes.This post is inspired from the instagram posts of raw tarts ,but this is my version.The base of this tart is made from dates,oats ,almonds,walnuts(all the healthy ingredients you can dream of).The filling is made from Greek yogurt and for topping you can use any fruit you fancy.Doesn't that sound simple? Of course .The rate with which we are heading towards summer this will definitely reduce the long hours in kitchen.

Dinner rolls| Pav
Hello every one !! Hope you all have been well.Catching the train with today's recipe.Dinner rolls or pav/pau as we call in India is a staple of every house hold.These mini,feathery bundles of joy have been my all time favourite.I still blurly remember the chaos at our local bakery for fresh out of the oven breads and dinner rolls.This is the second bread post on the blog after leopard bread which is the most popular recipe till date.Bread making isn't a cake walk- no I am not terrorising you.Baking a cake and frosting is much easier compared to bread making,well that is my opinion and I am sure with practise In Sha Allah I am gonna conquer my fear.

The region of rayalseema in Andhra pradesh is known for its spicy food.As you move towards the cities of guntur, nellore the food becomes spicier beyond imagination.Seriously it isn't for faint hearted.One such speciality is yerra karam dosa or in lay-mans terms onion masala dosa .It is also referred to as ulli karam dosa .A simple raw onion and spices paste when smeared with ghee on dosa elevates the taste of a humble dosa to several notches higher.

Idli |Soft and spongy idli's made from idli rava
South Indian breakfast is incomplete without Idli and dosa.Idli is the healthiest breakfast option.What is idli? Steamed rice and lentil cakes are known as idli.Traditionally Idli is made with dosa batter.Soft,spongy idlis can be made with idli rava/cream of rice too. Idli rava looks similar to our regular rava and is easily available in Indian stores.Compared to regular idli's the idli's made from rava require less soaking and labour .All you have to do is grind the urad dal only.I have used standard cup for measuringYou can use any cup just remember to measure both the rava and urad dal with same cup.The ratio is 2;1 ,for 2 parts rava one part urad dal.
Until my grand mother was alive only regular idli's were made .But when my mother took over the kitchen she found the idli's made with idli rava more convenient and happily accepted by the folks at home.Since then these idlis became part of breakfast menu.My kids don't prefer idli in their lunch box,so I reserve it for weekends.Usually Friday is the idli day at home.Steaming hot idlis with piping hot sambar.....Life can't be better than this!!!

Uggani /spring biryani
Uggani /spring biryani is a simple rustic south Indian sibling of poha.Unlike poha which is made from flattened rice uggani is made from murmura/puffed rice .Its often referred to as peasant meal as it is doesn't require any fancy ingredients and can be made with just few ingredients in hand .Uggani often comes handy when your pantry runs out of the supplies or even on that lazy weekend morning when you literally don't want your self strained with a elaborate breakfast.The better half of this Uggani is mirchi bajji .Its usually served with mirchi bajji along the highways in Andhra,When you are sceptical of trying food from petty stalls due to the source and quality of ingredients used in cooking,you can opt for this healthy uggani . Uggani never disappoints you as a accompaniment with evening chai (tea).

Open egg sandwich|Healthy breakfast
How do you start your day ? Do you start it with a healthy breakfast or sacrifice it for daily morning madness? I always start it with a healthy breakfast .It is recommended to have your breakfast in the first 1/2 an hour you wake up .But due to madness that prevails due to early morning school hours I grab a fruit or a biscuit on the go while waking up the kids .Later after every one has left on their mission I am done with my dose of breakfast.This schedule gets interrupted if it is mid week holiday.

Starting the day with a healthy breakfast is the best favour you can do to your body.Breakfast literally means breaking the fast after a long gap of 6- 8 hours.Obviously our body needs some energetic food to carry on the tasks for the whole day. A healthy whole some start refreshes your body and well as your mind .Milk, yogurt ,dry fruits ,fresh fruits are the best to start with.As I have already mentioned earlier smoothies are my favourite on the go breakfast for my kids. I am a south Indian and love my traditional breakfasts too ,but due to time constraints and my kids choice to have it hot from kitchen to table I restrict idli and dosa for weekends.

By looking at the picture and title of the post you must have understood that today's post is dosa .Paper roast dosa or Sada dosa as it is generally referred. Idli's and dosa's are the most common south Indian breakfasts or you can say an integral part of south Indian cuisine .Paper roast or Sada dosa or ghee roast, if drizzled with generous amount of ghee (clarified butter) is a paper thin rice crepe usually served with sambar and chutney .
I have grown up eating home made dosa's and idli's ,and thank god that my kids too are lucky enough to be fuelled with home made food .Though making dosa batter at home from scratch calls for some pre- planning but it is worth the time and energy invested .Yup " THE FRUITS OF LABOUR ARE ALWAYS SWEETER ",in this context crispier, on the outer layer and soft at the inner layer .Usually a wet grinder is used to grind the batter ,but I have always seen my mother and grand mother grinding it in the mixer . So me too walk in their foot steps and make the dosa batter in table top mixer .

Medu vada or urad dal vada a typical south Indian delicacy is a must in every south Indian house hold for breakfast or snacks for the evening which is generally referred to as tiffin. These are often referred to as savoury donuts because of the shape resembling donuts .Nothing can beat the taste of these when served hot with a cup of coffee ...TOTAL BLISS .these can be served with chutney ,sambar or even just pickle.Or else these can be munched as it on their own !!!I don't need any thing else as accompaniment to just gobble it down . Ragi dosa
Ragi is commonly known as finger millet. Ragi flour is made into flat breads, including thin, leavened dosa and thicker, unleavened roti. Ragi grain is malted and the grains are ground. This ground flour is consumed mixed with milk, boiled water or yogurt.
In India, Ragi recipes are hundreds in number and even common food stuffs such as dosa, idly and laddu are made out of ragi.
In southern parts of India, pediatricians recommend finger-millet-based food for infants of six months and above because of its high nutritional content, especially iron andcalcium. Home-made ragi malt is a popular infant food.Well ,lets talk about ragi malt in another post ,for today its ragi dosa .
This is generally a regular dosa with added flavour and nutrition of ragi .

Strawberry- oats smoothie
Aah!!winter is officially in ,thank God at least by mid Jan we are able to enjoy the winter season .
Though winter has knocked a bit late this year ,but arrived with a bang !! .Before we feel the change in climate one comes to know the change in season by merely seeing this great winter produce .
Be it the luscious strawberries ,oranges .....you just name it and its there in the market .During my last visit to the farmers market was lucky enough to get some red,juicy ,luscious strawberries .I couldn't behold my self to make a cake or a dessert ,just wanted some thing easy,refreshing and fulfilling.Finally decided to blitz a smoothie and gulp it down .
Smoothies are nothing but yogurt based drinks which are very popular in this part of the world....in Indian terms you can call it a thick lassi with addition of fruits ,cereal, oats and the list continues......
It serves as a great breakfast on the go option ,can be had as a pre lunch snack or simply your evening snack.A healthy and of course yummy drink with a fibrous- tag- the oats ...

Ajwain poori
I think we Indians love our fried goodies so much that every other day we find a excuse to serve them .Poori is also an Indian deep fried bread that is served on special occasions,festivals or casual parties .Its best paired up with Aloo sabzi .It seems that poori and aloo are made for each other ,the crispy poories with velvety smooth aloo sabzi !!!yummy its hard to stop with 1 or 2!!!!!!!.In Punjabi cuisine its served with chole masala ,the authentic Punjabi dish . I have seen my keralite friends relishing it with chicken korma .So over all its a food lovers delight (sorry!! for those who are on a diet ,not recommended since its deep fried ).Me and my family love to have it for our weekend brunch .
here is the recipe.The addition of ajwain(carom seeds) besides lending a new flavour to the regular poori helps in digestion also .

Spicy spinach bread (eggless)
Its raining since yesterday in portions .Alhamdulillah there's a change in the weather ,desperately waiting for this .Though this time winters are late ,but at least.... started on a rainy note!Rains bring along a change in the mood,the lush greens with drops of water on them ,the earthy smell ,drenched pathways , aah!!!what an eye candy .
Just cant keep yourself away from peeping through the window .Myself doing the same since yesterday.After bearing the summer temperatures as high as 48 c its surely a matter of rejoice.November had been a so so with hot noons and breezy evenings.
It was surely the effect of rain that I was badly craving for something spicy, aromatic with our evening tea.Baking is always therapeutic to me.
This was on my to do list for a long time,so thought of giving it try.It was my first venture on savoury breads .It falls under the category of quick breads.Usually breads are baked using yeast as a raising agent ,where as quick breads rely on baking powder or baking soda.
The subtle flavour of spinach together with caramelised onion and a hint of garlic elevate this simple bread to a next level of taste,Was complementing to the weather outside.The crust was crispy and the inner was soft like a sponge.The next day it even tasted better,just toasted it slightly .
The recipe follows.....................
INGREDIENTS
- 3 cups flour
- 3 cups onion
- 1 tbsp baking powder(bp)
- 1 1/2 tsp salt
- A bunch of spinach
- 3 green chillies
- 4 garlic pods
- 1 tsp sesame seeds
- 1/2 cup +1 tbsp +1 tbsp
- 1/2 cup curd
- 1 cup milk
METHOD
- Chop onions, garlic and spinach .To a heated pan add 1 tbsp oil .
- Add garlic ,chillies and cook for awhile .
- To this add onion and cook until it changes to light brown colour.
- Now add spinach and 1/2 tsp salt and cook until spinach has witted.
- Switch off the flame and cool it completely .
- Preheat the oven to 175 c
- In a bowl mix 1/2 cup oil,milk and curd.
- In another bowl mix flour ,bp ,salt.
- Add dry ingredients to the wet ingredients.
- Mix well ,now add the onion mixture and give a stir till well incorporated.
- Place it in a greased loaf tin .
- Smooth the surface with a spoon.Drizzle the remaining 1 tbsp oil and sprinkle the sesame seeds over it
- Bake for 50 minutes or until the skewer inserted comes clean.
- Cool it on a wire rack before slicing.
NOTES
- I have used curd u can even use sour cream or replace it with eggs.
- Used only 3 chillies to cater to my family's taste u can increase it if u want much spicier.
- Spinach can even be replaced with Italian seasoning or any other vegetables.

Fruit, chocolate, yoghurt parfait
Parfait is a french name given to layered dessert which can be of fruits and whipped cream or granola with cream and fruits,or with custard and cream,youghurt with fruits.....and the list continues, any thing you wish to have.
It can be served as an after dinner dessert or for breakfast with much healthier options.I had some disliked pieces of chocolate pastry,which were lying in the fridge.usually pastries are short time guest at my place<<lol,because we all love it so much ,no sooner they land on the table there will be a race to gulp them).... .
But this time these pastries were not lucky enough ,so they were laid to rest because the kiddos did not like the combination of chocolate with green tea!!!!!!.Lil z was even complaining "Mom you should have taken the regular chocolate one,I love it so much this doesn't even comes closer to it in taste"
OK .....apologies .......I just wanted to give it a try baby,(but frankly speaking me too was not much impressed by the taste of it) .So in order to rectify my mistake and make the pastries lovable to the kids I tried my hands on yogurt's parfait .....why yoghurt parfait?????????
Mashallah .....both my kids are yoghurt lovers, Lil z can stay on sweet curd rice for the whole day.If you are having brownies or simple chocolate cake u can try with that too..........Found it a very easy way to please the guests.....will try some time soon.

INGREDIENTS
METHOD
- Chop plums ,banana and hull pomegranate.
- Whisk yoghurt by adding sugar into a smooth cream.
- Cut the pastry into pieces .
- Take a long glass assemble a layer of yoghurt topped with cake .
- Again add some fruits topped with some yoghurt.
- Arrange in alternating layers until the glass is full.
- Serve chilled.

Grilled egg-mayo sandwich
Aah ....one more sandwich again .Sandwiches are always a family favourite,and when it is grilled then its icing on the cake .Aptly suited to this weather especially the chilly evenings .A hot grilled sandwich with a cup of coffee......nothing matches to this pleasure of comfort food.A ready to serve breakfast option.Though I am trying to avoid mayonnaise as much as possible(thanks to calories it carries) I couldn't resist my self from adding it to this.With crispy outer crust and juicy (mayo),egg bits along with the crunchy cucumber and tangy tomatoes will surely transport you into the land of bliss.It will be a bit messy but I think you don't mind paying it for a mouth full of flavours.
INGREDIENTS
- bread
- boiled eggs
- chilly mayo
- sliced cucumber
- sliced tomatoes
- olive oil or butter for drizzling
- salt to taste(optional
METHOD
- Chop the egg whites,trim the edges of the bread.
- Heat the grill or a pan
- Add chili mayo to the egg whites and mix it.
- On a bread slice add the egg mixture spread it evenly ,place cucumber slices ,tomato and close it with another slice of bread and give a gentle press.
- Drizzle a little olive oil or butter on the upper bread .
- Place the greased bread on the lower side of the grill and drizzle some olive oil on the top bread .
- Grill it until it turns golden.
- Serve hot with a cup of coffe
