Chocofill cookies|Cookies filled with chocolate






Chocofill cookies are soft chewy cookies with bursting chocolate in the centre. In short  it would be a chocolate lovers paradise.Soft ,chewy,buttery cookies with melt in the mouth, smooth ganache are just good enough to hypnotise any one .You just need a glass of chilled milk and a box full of cookies to pamper your self .These  chocofill cookies were so yummy that I couldn't control my self gorging on it.


Unfortunately this happens to be the first cookie recipe on the blog .I usually bake cookies at night,I cant shoot with out natural light  and  in the morning kids carry them to school for the gang of friends leaving one or two for me. In sha Allah I have lined up a few more recipes of cookies on the blog.



As edible gifts are much in vogue these days chocofill cookies end up as an excellent gift for the loved ones.Cookies can be filled with chocolate too ,but if you like liquid chocolate oozing out then go for this recipe to the T. 


Step wise tutorial for chocofill cookies

Preparation time:20 minutes
Baking time:25 minutes
Baking temperature:150 centigrade
Recipe source:  Zoeys bake house
Yields:12 - 15 cookies


Ingredients

Substitute for egg :2 tbsp water+1 tbsp oil +2 tsp baking powder mix it well until frothy and use it in place of one egg.

For ganache 

  • 1/2 cup -chocolate chips
  • 1/4 cup -cream 
For cookies

  • 1 1/4 cup -All purpose flour(maida)
  • 3/4 cup - icing sugar
  • 2.5 tbsp - cocoa powder
  • 120 grams- unsalted butter
  • 1 - egg
  • 1 tsp- vanilla
  • 1/2 tsp salt

Procedure for ganache 



1.Add cream to a microwave safe bowl and heat it on high for 10 - 12  minutes .Donot over heat just      when it bubbles from the sides

2.Add the chocolate chips and rest for 1 minute.with a spatula mix it until a glossy smooth ganache is     formed.



3.Cover and store in refrigerator for 30 minutes.

4.Remove and mix it with a spoon until it thickens.


Procedure for cookies


1.Sieve flour and cocoa in a bowl.

2.Add  butter and icing sugar to a bowl and beat it with a hand blender until well combined.



3.Now add egg, vanilla essence ,salt and beat once until mixed.

4.Add the flour+cocoa and bring the dough together,do not knead too much .

5.Wrap in a cling film and refrigerate for 30 minutes.



6.Divide the dough into equal balls,flatten it and stuff with ganache .(as we do for parathas)

7.Bring the corners to the centre and seal it well so that the ganache does not come out while baking.


8.Press the cookies slightly and arrange them on a baking tray lined with parchment paper.





9.Bake in a preheated oven at 150 degrees centigrade for 20 - 25 minutes.

10.Cool it on a wire rack ,before serving .


Notes

  1. I have used Hershey's semi sweet chocolate chips ,cadbury cocoa powder ,alamarai whipping cream.
  2. Temperature differs from oven to oven so use your discretion while baking.
  3. Though the original recipe suggests 160 c,as I have a small oven so I have gone for 150 c.

  3. The dough is a bit sticky as we roll it and stuff with the ganache. . Any idea why it is so and how to correct it?

  4. Be quick as you can,after removing from the refrigerator,the warmth of the hands too will make the butter melt and make sticky. Place it in freezer for 10 minutes before stuffing ganache if it becomes too sticky .hope that works 😊

  6. You seem to have used whipping cream for the ganache. Will Amul cream work?

    1. Yes,aparna I think it should work.as we are not using it as frosting,just for ganache amul cream works.
