Ragi(finger millet) is called as Mandia in oriya .Pancakes made from ragi ,rice and coconut serve as excellent source of nutrition. Mandiya pitha are soft fluffy pancakes that can be had at any time of the day.These pancakes are hassle free as all pancakes are but with a tag of 'healthy' .Mandiya pitha is a completely vegan recipe if made with oil.Ragi is traditionally believed to be a body coolant and finds its way in most of the food from the southern states. Off late the kids have started to accept ragi in their meals apart from the ragi porridge.
How to make ragi pancakes
Preparation time:20 minutes
cooking time; 15 minutes
serves:4
Ingredients
- 1/2 cup -ragi flour/fingermillet flour
- 1/2 cup-rice flour
- 1/2 cup-fresh coconut
- 1/2 cup- water
- 1/4 tsp -cardamom powder
- 1/2 tsp-baking powder
- 2 tbsp- ghee/oil
- a pinch of salt
Procedure:
- Grind coconut to fine paste in a mixer.
- Add all the ingredients except ghee and make a thick batter with out any lumps.
- Keep aside the batter for 30 minutes.
- Grease the griddle with ghee and add a ladle full of the batter.Do not spread the batter.
- Cover and cook until the edges turn golden brown.
- Flip the other side add ghee/oil and cook for 2 minutes.
- Serve it hot with some nolen gur(jaggery) syrup.
