"Sweet potato cake" as the title suggests is dense ,moist cake frosted with nutella .I know you might be frowning by now .'sweet potato and a cake' ,my kids too did the same .younger one was constantly pleading "Mom why do you want to use a sweet potato in a cake ?How will it taste ?please mom, bake me a simple cake with out sweet potato .He was standing beside me carefully observing every detailing of the recipe eagerly awaiting his chance to lick clean the bowl and the spatula .And after done he passes the verdict "Hmm!! the batter is delicious so the cake too will be delicious ".And while the cake was baking, the aroma that was wafting around the house pulled the kids to the kitchen .
Me too had a lot of apprehensions before baking sweet potato spiced cake .But once it was out of the oven ,that was really a surprisingly soft ,dense cake with a nutty crunch from the walnuts and the spiced cake complementing the sweetness of nutella. I have grown up eating the savoury versions of sweet potato or just dip sweet potato in sugar and enjoy !!!.Later learnt from friends that sweet potato is used in desserts too .
As there is change in the climate the markets are flooded with fresh ,fall vegetables like pumpkin ,sweet potato ,butternut squash ,turnips.Though here in Qatar there is not much a big difference in the nature as compared to western world ,but when the morning breeze caress your cheeks and your abaya doesn't get drenched after a 30 minutes walk then its the sign of change in the season .
I am so loving the cool mornings and breezy evenings. Ahh! all you need is a big slice of this cake and a hot cup of coffee ,that's the perfect end to the day . When ever I have sweet potatoes either they find their way in kheer (rice pudding) or get transformed to crispy wedges.But this time went for a cake and I haven't regretted . This cake tastes awesome both warm as well cold .why nutella? kids readily accept anything served with a dollop of chocolate or nutella,so to lure the kids I have gone with nutella frosting . You can go with your choice of frosting .

Ingredients
- 1 cup sweet potato (boiled and mashed )
- 1 cup +6 tbsp all purpose flour (maida)
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- salt 1/4 tsp
- 1 tsp cinnamon powder
- 1/2 tsp ginger powder
- vanilla essence 1 tsp
- Nutella as desired
- walnuts as desired
Procedure
1.Sieve together flour,baking powder,baking soda, ginger powder,cinnamon powder and salt.
2.Grease a 4" cake tin .Preheat the oven at 175 c .
3.Whisk sugar and eggs together until sugar is dissolved completely .
4.Now add vanilla essence ,oil and sweet potato puree ,whisk it until mixed well .
5.Now slowly add the sieved flour in 4- 5 lots.
6. Turn the batter into greased tin ,tap it and level it with a spatula .
7. Bake at 175 c for 50 - 60 minutes or until the tester comes out clean.
9. Cool cake in the tin for 15 minutes and transfer to a rack to cool completely.
10. Once the cake cools to room temperature frost it with nutella and garnish with chopped walnuts
Looks really interesting... Never tried cooking with sweet potatoes... I had accidentally picked it up sometime back thinking it was tapioca... hehe... I totally agree to you, the months ahead I am eagerly waiting for... Now getting out in the afternoon is also not very harsh as it used to be earlier, Alhamdulillah... :)
