You might be wondering where have I been vanished .The entire last week I was facing a blogger glitch and was unable to upload photos into blog posts.Later when this issue was solved I was under the weather. With Cold and flu all around the city it was my turn for the bout of illness.
Today I am having a guest with me :),Lubna Karim of yummy food .well, Lubna needs no introduction in the blogosphere ,but still as a formality let me introduce you all to Lubna ,who blogs at Yummy food .A down to earth person and above all a good human ,lubna always makes her readers gawk with her droolicious pictures .
I was fortunate enough to grace her Ramadan event this year .Do check out at yummy food to know more about Lubna. Lubna is an avid baker and masters microwave baking .Hop over to her blog for more microwave recipes. When Lubna suggested this Microwave Eggless Dates Brownie Hearts,I instantly said yes as this would be a maiden recipe for microwave cooking on my blog.
Honestly I use my microwave just for re-heating,and occasionally -once in a blue moon for cooking rice etc.As this post goes on air Lubna is grief stricken amidst the floods in Chennai .Let us pray and hope for the well being and rehabilitation of the chennaites .
Over to Lubna to know more about the recipe .
Assalamvalekum and warm welcome to the
readers of ‘The Food Factory’ I came across Nusrath and her blog through a
common blog friend ‘Rafeeda’ of ‘The Big
Sweet Tooth’. Though being newbie in food blog world I must say ‘Nusrath’
will do her blog homework very well to bring us a droolicious post every time.
Apart from sharing the same passion of blogging we two hail from same state,
that makes us ‘State Cousins’.
When Nusrath reached me to do a guest post,
the first recipe which came to my mind was a cake. I am very fond of making
cakes and trying out new cakes in my microwave. I made these heart shaped
brownies for my little darling ‘M’ as after-school treat. Warm brownies are my
favourite too. Thank you Nusrath for having me on your blog and giving me
chance to share my recipe with your awesome readers. Happy Cooking!
INGREDIENTS:
1 cup + 2 tbsp. all purpose Flour
¾ cup Icing sugar
4-5 tbsp. Hershey’s Syrup
½ tbsp. Baking powder
pinch Salt
pinch Baking soda
8 Dates, pitted and chopped
½ cup + 2 tbsp. Butter, at room temperature
¾ cup Milk, at room temperature
½ tbsp. Vanilla essence
PREPARATION:
- Grease microwave safe bowl with butter and dust it with flour. Set aside.
- Microwave dates for 15 seconds and upon cooling add little milk and blend to make a smooth paste.
- Take this in a bowl and add rest of milk, Hershey’s syrup, vanilla essence and butter.
- Whisk until well combined. This is our wet ingredient mix. In another bowl, add all purpose powder, baking powder, salt and icing sugar. Whisk or sift until all the ingredients get well combined.
- Make a well in the centre and slowly fold in the wet ingredients. Mix gently until well combined.
- Now pour this batter into greased microwave safe bowl and tap gently to spread the mixture evenly.
- Microwave on high for 3-4 minutes or until the skewer runs clean when inserted in the centre of the cake.
- Turn off the microwave and leave the cake in microwave for 5 minutes. Remove and leave it to cool for 10 minutes.
- Flip the cake onto wire rack and cool completely. Now using heart shape or any other shape cookie cutter cut into desired shapes. Dust with icing sugar or decorate with sprinkles.
- If you can get hold of heart shaped silicone muffin liners then use them.
NOTE:
Microwave recipes are easy to make and good
when consumed in 2-3 hours.
Microwave timing can differ depending on the
models. Mine is 20 lit. capacity IFB Microwave with 1200 W.
Thank you Lubna for an amazing and easy guest .It was a pleasure .
