Tahini or tahini paste is quintessential part of middle eastern cuisine/Arabic cuisine .It is basically roasted sesame seeds ground with olive oil .It finds its place in dips ,hummus ,babaghanoush and as an accompaniment to falafel .
The earthy aroma of sesame seeds truly compliments the fruity characteristic of olive oil .Just two ingredients and you are done with a nutty healthy dip .This is the basic tahini paste .Add garlic for garlic tahini or lemon for lemon tahini and yogurt for tahini used as a dressing in wraps, and the list continues .If stored in a sterilised jar in refrigerator it lasts for a month .Make sure you always use a dry spoon to use it .

Step wise procedure for tahini paste
Preparation time : 10 minutes
grinding time :5 minutes
yields : 1/2 cup tahini paste
Ingredients
- 1/2 cup white sesame seeds
- 2 tbsp olive oil
Procedure
- Add sesame seeds to a pan and dry roast it until light golden colour .
- Remove it in a plate and cool to room temperature .
- To the dry mill of the blender add the sesame seeds and grind to a coarse powder .
- Now add 1 tbsp of oil and grind it .add remaining 1 tbsp oil and grind .
Your tahini paste is ready .isn't it just too simple :)
