Starting today I am gonna start "Meatless Monday's" series where in I am going to post a vegetarian recipe on the blog.Though the week starts from Sunday here, I am going with the rest of the world . I think Mondays are for repentance .'Repentence' for what ?
Repenting for all the junk food that we wantedly or unwantedly stuff ourselves with, just in the name of 'weekends'. And now its time that we cleanse our body .Beet root is just the right vegetable to start with .


Whether you roast it whole, blend into a classic soup or drink as juice beetroot is low in fat, full of vitamins and minerals and packed with powerful antioxidants.
If you don't like the taste and smell of the beet root then this beetroot oats smoothie is just for you .For this Beetroot stir fry I have just steamed the veggie and tempered in south Indian style with roasted Dal's and a dash of cumin  .

 Andhra style 'beet root vepudu' is an extremely easy and healthy way of cooking beet root, so that the nutrients are not lost during the cooking process .Beetroot is a powerhouse of nutrients with an acquired taste .Beet root is loaded with potassium,magnesium,iron,antioxidants and ample amount of soluble fiber.Beet root is highly recommended to people suffering from blood pressure and liver disorders.Including this versatile super food in the diet would be a wise decision.'Beetroot vepudu' goes well as an accompaniment to veg meal .It goes well with chapati or rice.   

Here is the recipe ...How to make beet root stir fry :



Ingredients:

  • 3  beet root(medium size)
  • 2 tbsp oil 
  • 1 tbsp chana Dal ( Bengal gram )
  • 1 tbsp urad Dal (black gram )
  • 1/2 tsp cumin seeds ( jeera)
  • salt to taste 
  • a sprig of curry leaves







  • Directions:


  • Wash ,peel and chop the beet root into cubes .
  • Steam the beet root in a steamer until done or place a sauce pan with water on medium heat and add chopped beetroot to a colander or sieve close with a plate and steam until done.
  • For tempering just add oil to a pan and add cumin seeds,Chana Dal ,Urad Dal and fry until golden in colour.
  • Now add steamed beetroot to it ,add salt accordingly ,stir it well .
  • Serve it as  a side dish .


Tips:


  • Fry the Dal's on low flame ,take care not to burn it .
  • You can even pressure cook or boil the beetroot ,but I prefer steaming .
  • Chillies can also be added for the spice quotient .

  2. I totally agree that beetroot is an amazing vegetable, but had never though of cooking it in Indian food, love it!
