Panchratna jalfrezi





As u can see in the picture it is a medley of vegetables slow  cooked with spices with out water.It has five vegetables in it hence the name "panchratna",which is a Hindi word which means _five jewels.

It provides the daily amount of fibre needed for our body.fruits and vegetables contain fibre that is required for the proper functioning of our body.Thanks  to this age of processed food we hardly get the desired fibre,so i try to incorporate as much vegetables as possible in our diet.And Alhamdulillah my kids eat their share of vegetables served.it is a....sukhi subzi which goes well as a side dish with Dal's  ,curries,non veg.... any thing
It can be spread on a bread or a rolled in a chapati and can be packed as tiffin box for the school .Its an easy peasy dish (apart from chopping the vegetables)that can be made under 15 -20 minutes.................so here's how i made it................



INGREDIENTS

  • 1 cup french beans(chopped)
  • 1/2 cup capsicum  (chopped)
  • 1/2 cup carrot   (chopped)
  • 1/2 cup potato  (chopped)
  • 1/2 cup zucchini  (chopped)
  • 1/2 tsp red chilly powder
  • 1/2 tsp kalonji(onion seeds)
  • 1/4 tsp turmeric
  • 1 tbsp oil
  • salt to taste
  • coriander leaves for garnish


METHOD

  1. Finely chop all the vegetables.
  2. Heat oil in a heavy bottomed kadhai or pan.Add onion seeds allow it to splutter,now add the chopped vegetables  to it and the masalas,salt.
  3. Give a nice stir and close the lid.
  4. cook it on low flame until potato gets cooked,others easily cook.
  5. As we have not added water, there are chances of burning it... so keep stirring frequently
  6. Serve it with any choice of your curries
