Mango Shrikhand or Amrakhand is one of the easiest and healthiest dessert option .Shrikhand is an Indian sweet dish made of strained yogurt. It is one of the main desserts in Gujarati cuisine and Maharashtrian cuisine. Preparation of this dish is very simple but it takes some time to process yogurt properly.
To prepare shrikhand, yogurt is tied in a cotton cloth and left under pressure to drain.The strained yogurt, referred to as "Chakka", and sugar are mixed thoroughly in a deep bowl.Cardamom, saffron, and any other flavors are then added and mixed. It is then left in the refrigerator for the sugar to dissolve. The dish is served chilled.
A popular variation of shrikhand in Maharashtra is Amrakhand , which is shrikhand blended with mango pulp. It is commonly served as part of a vegetarian thali in Gujarati restaurants and is popular as part of wedding feasts. It is often served chilled as a counterpoint to hot and spicy curries. Dried and fresh fruit such as mango are also added (source wikipedia).
This is the first recipe of mango in the blog since summer has started and mangoes are available .I know I am late ....the season of mangoes is about to end .Unfortunately this year mangoes available here are not so sweet ...and luckily the sweet ones were not allowed to touch by me !!.I mean my kids are crazy for mangoes and I was strictly directed not to mess with mangoes .Kids love to relish mango as cubes ,just peel ,chop and gulp it down ,Hmmmm!!. Hubby brought a trolley full of mangoes from his trip to india. Thank God!! now I can relish mangoes the way I want .

INGREDIENTS
- 300 gms thick curd / yogurt
- 1 big mango
- 1/4 tsp cardamom powder
- Sugar as needed depending on the sweetness of mangoes
- Mango slices for garnish (optional)
- Nuts for garnish ( optional )
METHOD
- To a muslin cloth add all the yogurt tie it with a string and hang it on a tap for 2- 3 hrs .
- You can even add yogurt to a sieve ,usually used to sieve flour and place it above a bowl to strain water from yogurt .
- Peel ,chop the mangoes roughly and blend to a puree in a blender.
- Take strained yogurt or chakka (in Hindi) in a bowl and all the above listed ingredients and whip it manually with whisk to creamy consistency .
- Serve chilled with slices of mango as garnish .
