Pasta salad with roasted eggplant dressing |How to make pasta salad from scratch




Hello folks,hope you are doing fine.After a long hiatus I am back .OK....I got it ,you guys might be wondering about my where abouts.Yes,that's what your messages conveyed.Thank you every one for your sweet messages I was really touched.Hm mm ...I was missing from this space as I was busy visiting my family back home  for Eid, followed by my brothers wedding .Staying far away from homeland ,weddings are the only occasion where we get to meet our relatives and friends from far and near .Coming back to Doha I was welcomed by a dust laden house and scorching summer.Grrr!! summer in a dessert, you have to experience it to feel it .That is just inexplicable in words .





After being with family and surviving on food cooked by mom,you just don't feel like cooking for your self.Those care free days ,rather I would call it moments of roaming all day in pyjamas with no tension and worry of cooking and running the errands !!and Mom serving all your favourites....Why all good things come to an end?How good it would have been if there was a rewind button for our lives and I would happily live those moments hour after hour .But Alas!!! nothing such is going to happen.We come across the oceans leaving our loved ones behind with hand full of memories engulfed in photographs to cherish for a life time and  with a hope to see them soon .


There is something magical about rains.The music of the water drops ,petrichor ,puddles of water ,washed houses ,the lush greenery-MESMERISING.

And that too if you are back from India your body pleads for some detox !!!seriously.I know you will agree with me on this.Monsoon,rains were an excuse for binging on all sorts of fried foods from samosa to jalebi and everything you could find ,as there is no tomorrow .My princess was compelled to react on this and at last she asked her aunt "You guys eat fried food daily in India ".it was but natural for her to react as we are not used to so much of fried goodies in our routine .Yes we do indulge ,but once in a while.And must thank God for enabling me to inculcate good eating habits in children .And I am proud of it .Masha Allah the older one has become so sensible that she keeps a record of her daily intake and at night shares with me"Mom, there wasn't much healthier food  today ,tomorrow we need to cover it up.At her age I never cared about it .This generation kids are way much smarter than we think.
The painting (in the collage )at a restaurant was painted in such away that where ever you moved it seemed as if it was looking at you -Marvellous.





In my quest for making  healthy easy meals I landed with this recipe.Kids are pasta lovers and that was a plus point but eggplant is something they are not comfortable with .So here comes the disguise trick .Serve it in disguise ,so that they could not pick and set aside -Mommy woes of picky eaters .This dish is a one pot meal that keeps a check on your daily intake of carbs,vitamins ,fibre,calcium .If you have some boiled pasta in hand then it is just a breeze.More over this can turn out to be your clean-out-the-fridge recipe,just dump in what ever you have.You can add any veggies of your choice like broccoli,peas, potato capsicum anything that catches your fancy .








Recipe for  Pasta salad with roasted eggplant dressing  

Preparation  time :15 minutes
Serves :2

Ingredients


  • 1 cup- boiled pasta 
  • 1- cucumber 
  • 1-carrot
  • 1/2 cup- cabbage
  • 1/2 cup -eggplant dip(click the link for recipe )
  • 1/2 tsp -white pepper powder
  • 2 tbsp -extra virgin olive oil 
  • salt to taste 

Procedure

  • Peel and finely chop all the veggies .
  • Add pepper powder,salt ,olive oil to the eggplant dip and whisk it until it becomes frothy.
  • To a bowl add pasta (boiled),followed by chopped veggies .
  • Now add the eggplant dressing and mix it well .
  • Adjust the seasoning and serve it chilled or as it is .

  1. Welcome back Nusrath! delightful read and pictures. Eggplant - is something we dont make at all. The only time we use is to make Baba Ganoush and that too very rarely when the craving hits. But I do this disguise trick for green leafy things lol. Pasta with eggplant dip is for sure very innovative and original!
