Mango rose cake

With mangoes in season all I could think was this delicious beautiful mango rose cake.We are a family of mango lovers and relish mango on its own .But a cake never hurts-right? Mango has its own sweetness and colour and is perfect for cakes.A moist vanilla cake layered with whipped  cream and adorned with mango in the form of a flower.Why vanilla not a chocolate? ( my kids too asked the same ).I don't want to over power the taste of mango with chocolate + mango and vanilla are a combo made in heaven.I have just added mango puree between the whipped cream layers just to increase the mango flavour.












This cake is perfect for any parties and get together and I am sure will earn you some brownie points .Mango rose cake was so beautiful that I couldn't hold my excitement and posted on my instagram account  first (which I very rarely do) .I don't have any clicks of this cake in a slice as it wasn't as aesthetic as the whole cake is and more over it was mopped before it got clicked.For the vanilla sponge cake I have used my favourite recipe for vanilla sponge cake (click the link) because I haven't come across an easy and minimal fat recipe as this.You can go with the actual recipe  or add some oil like I had done in this checker board cake .



Recipe for Mango rose cake 

baking time :30 minutes
frosting time:1 hour
serves:6



Ingredients

  • 5" -vanilla sponge cake 
  • 250 ml-whipping cream
  • 2 teaspoon- sugar
  • 3 -mangoes
  • 1 teaspoon -vanilla
  • 1/2 cup water+2 tbsp sugar


Directions


1.Follow the link of this vanilla sponge cake and bake the cake .

2. Allow it to cool to  room temperature .Make a simple syrup by boiling 1/2 cup water+2 tbsp sugar.

3.Peel and chop a mango and puree it in a blender.

4.Whip the cream to stiff peaks by adding sugar and vanilla .

5.Slice the cake into 2 half and place one half on the cake board.

6.Moist the cake with sugar syrup and frost with whipped cream.

7.Spread mango puree over the cream and place another half of the cake over it .

8.Frost he entire cake with cream and set aside .


10.Your mango rose cake is ready .
