How to make finger millet banana bread |Ragi-banana chocochip bread | Finger millet chocochip bread | Healthy banana bread





Mom ,What's there for breakfast ? This is the most irking question .Deciding the every day menu with 3 different meals is tedious job.With the school running in full swing and summer at its best I prefer a hearty and healthy lunch box which lifts their mood and makes my job (cooking) easier.Schools here in Qatar start as early as 6.30 am,Yes you read it right 6.30 am and the kids have to be ready by 5.30 to catch their school bus .




As  a mother I always try that the kids have their breakfast .Do you remember the age old saying :

"Eat breakfast like a king 
Lunch like prince 
Dinner like a slave"


I strongly abide by this .At this point of time, for the breakfast especially,baked stuff comes to rescue. Atleast they stuff a few morsels of the edible which would ferry them till the school break . Incorporating fruits in baking is the best way to provide kids with the essential nutrients .What better way than a banana bread for breakfast .I have tweaked the previous banana bread recipe .This time its Ragi chocochip banana bread .The nutritive value of banana bread has increased with the addition of ragi or finger millet .Millets are the talk of the town. Being rich in fiber and loads of nutrients millets are a worth to be included in our diet .

INGREDIENTS:

  • 1/2 cup whole wheat flour ( atta)
  • 1/2 cup ragi flour (finger millet flour) 
  • 1/2  tsp  baking powder
  • 1/4  tsp  bicarbonate of soda
  • 1/4  tsp salt
  • 1/2 cup sugar 
  • 1/2 cup oil
  • 2 banana (ripe)
  • 2 eggs
  • 1 tsp vanilla essence
  • Chocochips as needed







PROCEDURE:

  • Preheat oven at 180 c and grease a  loaf tin and set aside .
  • Sieve the dry ingredients ,take eggs in a large bowl or processor with whisk attachment  and beat until they become frothy.
  •  Add sugar and beat until it becomes pales and the sugar dissolves .


  • Take bananas in a bowl mash, add oil  and mix well , next add vanilla ,cinnamon and give a nice mix .
  • Now add the egg and sugar mixture to the mashed bananas and stir well .
  • Dust choco chips in the sieved flour and set aside.




  • Fold in the dry ingredients add the chocochips  to the batter and pour in the loaf pan .
  • Add some chocochips on top.
  • Tap it to release any air bubbles ,and flatten the top . .
  • Bake it for around  30 - 40 mints ,or until the skewer comes out clean .




  • Remove it and cool  in the tin for 10 mints .
  • De mould and place it  on a wire rack to cool .
  • Serve with your tea or coffee.


TIPS:

  • Every oven has different temperature ,so keep an eye from 30 mints onwards .Mine was done in 35 mints.
  • I have used Hershey's milk chocolate chips.
  • Do not over mix the batter,as it makes the cake harder.
